Tapioca is a starch extracted from cassava root. They are smooth round ‘boba’ found in the famous bubble tea. They are also used extensively to make khichdi for fasting or as tikkiya. Size varies according to the region of harvest. Indian Tapioca or Sabudana is medium-sized pearls. Whereas the Thai variety is comparatively smaller.
